GRIMAUD HYBRID PEKIN DUCKS

We raise Grimaud Hybrid Pekin ducks because we believe they offer the complete package: exceptional meat, rich duck fat, abundant egg production, excellent fertility, and calm, friendly personalities.

 

Our Pekin ducks originate from Metzer Farms, which imports breeding stock from Grimaud Frères, a renowned poultry breeding company in France. The strain we raise is the Grimaud Hybrid Pekin, Strain 53. This hybrid is produced by crossing males from Grimaud’s Line 50 with females from their Line 30. Line 50 ducks are known for their impressive size and outstanding meat qualities, while Line 30 ducks are valued for their productivity and ability to lay large numbers of fertile eggs. The result is a fast-growing, feed-efficient duck that excels in both meat and egg production.

 

Duck eggs are often considered a luxury ingredient by chefs and home cooks alike. Larger than chicken eggs, they contain more protein, more healthy fats, and higher levels of many vitamins and minerals, including vitamin B12, selenium, iron, and folate. Their rich yolks and higher fat content create baked goods with exceptional texture, making them highly sought after for pastries, cakes, custards, and homemade pasta.

 

Many people also appreciate the richer flavor and larger size of duck eggs compared to chicken eggs. Whether fried, scrambled, poached, or baked into your favorite recipes, duck eggs bring an unparalleled level of richness.

 

Our Pekin ducks are ready to process at approximately 8 weeks of age and  produce a hanging weight of around 5 pounds. Pekin duck is world-renowned for its mild and approachable flavor, tenderness, and versatility in the kitchen.

 

One of the defining characteristics of Pekin duck is its generous layer of fat beneath the skin. When preparing duck breast, the skin is traditionally scored before cooking to allow this fat to render properly. The result is crispy, golden skin and incredibly flavorful meat.

 

A single Grimaud Hybrid Pekin duck can yield approximately one cup of rendered duck fat—or as we call it,  “liquid gold.” Duck fat can be used anywhere you would use butter or cooking oil. It elevates roasted potatoes, vegetables, eggs, and countless other dishes with its rich flavor and exceptional cooking qualities.

 

After raising many types of duck, we believe Grimaud Hybrid Pekin ducks are simply the best all-around duck breed available.
